What are the must play dungeon crawlers?

I'm new to this genre but it tickled an itch and I want more.

Basically, any Western DRPG is good while any Japanese one outside of Wizardry is sludge.

That pic and like Etrian Oddysey 4. There's a few EO games that are good if you don't specifically want that one. Mary Skelter is good. Experience, Inc has made a ton of dungeon crawlers but a lot of them are not worth trying. Probably Undernauts is the best bet.

I really enjoyed the structure of the world. Open ended maps and using spells to traverse and open up new routes. Are there any other games that do this?

Etrian Odyssey is a good starting point (4 and EOU2 for beginners, 3 for when you get more familiar with the mechanics and don't mind some of the jank of the earlier games). If you want some other suggestions, I would consider Legend of Grimrock or Vaporum too if you want something more akin to puzzles or CRPGs.

There are DRPGs that auto map, if that's what you mean. If the "fog of war" of needing to explore it yourself is the detractor, then I don't think there are and DRPGs without it.

Something like the Conception games? You set out with the MC and 3 set of teams, has a procedural dungeon and some traps to avoid. No dark zones and puzzles since its procedural.

You can absolutely drop a medic for wufan/an arcanist but just remember that since you're going from strong raw heals to HoTs, your party might need to be beefier than before to accommodate.

You're completely right and there's no reason a modern automap system shouldn't be more intelligent. The grid design is for player-mapping (which ironically doesn't require stepping on every square because you can draw what you see).
Obviously an auto-mapping system should also have an indicator of what you've seen but not stepped on, for trap purposes.
