My issue is I don't know how to play these things, I always reach some kind of bottleneck and everything starts going wrong. Anytime I look up guides, it's never the basics or intermediate shit, it's always high level optimisation shit that is both out of my wheel house and doesn't interest me as a play style even if I did understand what I was doing.
I wanna make a cozy city without shit collapsing in on me with the game sending me notification after notification of this demand not being met, this item is now critically low, or an entire district being on fire.

cities skylines is a very accessible/forgiving game and you can go as slow or as fast in terms of development as you'd like
ive never played the sequel but i cant imagine the made the game immensely challenging, its great if you just want to build casually
anno 1800 is another good choice but that is a bit more demanding in terms of resource production and allocation, you can turn off all the combat elements and just focus on aesthetics and if you simply follow ratios for production (two wheat to 1 bread house, etc.) then its all very straight forward

pic not my build but it does let you build really appealing cities, though sadly 1800 is on a square grid i heard the recent roman game is lacking in many areas despite having diagonal roads

I try. I think it's a 3-piece because I don't stick to the same world for long, I spend too long looking for the right place, and I prefer small, compact builds.
I think it would help if I get some mods that add more to the game, like seasons and exp mods.

Anno 1800 was one of the three I've played cause it was recc'd a lot. In that one, shit kept getting set on fire (I had way too many firehouses at one point so fires were put out quick but they kept happening at a strange rate) and I kept running out of resources. Mainly coal & iron, roughly at the same point which was soon after unlocking them in the story mode.
Tried multiple times but gave up cause didn't get what I was doing wrong. Especially when I mainly repeated what the game told me to do.

charcoal is my biggest gripe with the game, making iron/steel and smithing in general requires so much of it and filling a 3x3 charcoal pit with firewood takes a small forest worth of trees and occasionally you'll misplace one piece of firewood and the entire batch will be lost

You really wouldn't build it that way without trying to, it's not even economical at first.

Colony builder that's special for being extremely granular (meaning your colonist have organs you can lose, remove and replace and so on), all the colonist also have personality trait
It also has multiple biome, climate, day/night duration based on where it is on the planet.
You can move with caravan over the planet, even before buying the DLC that let you make your colony into a spaceship.
There's "storytellers" generating plenty of events, from dry storm, to spaceship parts falling down the sky with hostile insectoid or robot inside...

There's a few DLC adding variety and sometime critical feature:
- psychic power and Dune like faction that let you roleplay as king & noble + extra armors + psychic wood people, nice to have
- tech heavy one that let you fight extra robot faction, and clone or grow children (it's not that necessary as it sound), also techno vampire, don't ask. I don't recommend this one
- IDEOLOGY, which is great because it let you give your colonist belief and trait you would normally not have. So you can make a colony of technophile which practice cannibalism.
- questionable one that let you essentially roleplay as SCP foundation with eldritch monster
- and ODYSSEY which let you build your colony into a spaceship and move from area to area

this is why i don't think automation games work very well in the 3d space, providing you can place on the z-axis. it just encourages ugly, vertical factories. the only game it really works in is modded minecraft cus you can hide them with nice buildings. it's the reason despite trying many times i've never been able to get into satisfactory
i could try to tame my autism and just not build efficiently in a vertical space but that doesn't seem possible
