I used Fraps, although it tanked the frame-rate by half so I could only use it in older games

(For the NES you just had red and yellow, you would need a splitter to split the red cable into 2 audio outputs for stereo VCRs). You hooked a male/male set of yellow red and white cables from the VCR output port to the INPUT port on your TV. You set the TV to A/V input, set the VCR to A/V input, popped in a tape, and hit RECORD.
