I don't really have a good reason for it but in my mind I associate the tone and world of Dark Souls 2 with Dragon's Dogma and not really the rest of the Souls series.
And I don't mean this as a meme or an insult to DS2 or Dogma. There is just something about it that feels aesthetically/tonally similar between the two.

It has 9 legacy dungeons.
Stormveil, Raya Lucaria, Volcano Manor, Leyndell, Azula, Haligtree, Belurat, Shadow Keep, Enir-Ilim.
And they're generally much bigger than the dungeons in the other Souls games too.
Though by design a good 60% of every dungeon is optional to make replays less tedious.

I'd also point the underground areas in Elden Ring. Unlike much of open world where you can just use Torrent to run past enemies, there's parts where it is disabled, so you actually have to deal with the enemies.
And even the parts where you can use Torrent usually have you engaging with enemies, like when you light the fires in Siofra River.
Yeah, it doesn't get to level of Stormveil or something, but I think those segments are pretty good, about as good or slightly better than Darkroot Garden.

In hindsight, I think DS3 was the best souls game.
Initially I thought it was a mixed bag, the gameplay was definitely better compared to the old titles, much more fluid, faster estus recovery, little stamina usage on rolls, basic things like that.
But I felt that exploration wasn't as cool as in DS1 where you could descend all the way down from the ghetto to the sewers to lava land and even find weird Aztec-like temples and trees that sprout from lava deep underground.
By comparison, smouldering lake felt kinda tame, with it's little lava puddles. But then I though about the cathedral of the deep, and farron keep, fucking irithyl of the boreal valley and archdragon peak. So now I'm thinking yeah, maybe it really is the best game overall.

I like bosses in DaS3, nothing else really. Demon Prince is probably my favorite boss in souls games. DaS2 just does everything else so well. I can go in DaS2 and run any build and its fun. I generally like the more slower paced combat, but where wrong action is costly. The atmosphere and level design just give me ocarina of time vibe too.

I also preferred the slower-paced combat of DS2, where a boss like the Fume Knight was considered to be aggressive and unpredictable.
DS3 started multiple annoying trends with Sister Friede and Father Ariandel, like triple-phase bosses with endless combo attacks. It's unfortunate that this become the norm in ER rather than the exception.

Oddly enough my favorite boss is probably Vordt.
He's not too hard to read but he can jump around a bit and keep you on your toes. He's also big enough that it's easy to see what he's gonna do. And he only gets one health bar. Just a fair and decent fight.

One can only hate Shrine of Amana and similar DS2 levels because the level itself is your enemy, except this time you can't lock onto it and press two buttons until you see a health bar disappear. That's obviously bad game design. Same goes for Sen's Fortress, but at least DS1 has enough comfy backtracking to let you forget all about the few challenges that you can't track via the HUD.

DaS3 feels like "cut content: the game", like it was missing even more content than DaS2, just in a way where it was less obvious due to the feature creep in DaS2 highlighting whatever was actually missing.
On replays you just know that half of the game's content is done with by the time you get out of Undead Settlement and a good chunk of that remaining content is back where you came from in the Archives.
So many areas after that point are stub areas that you can go through in 5 minutes, swamps, copypasta chalice dungeon corridors or all of the above.
