Gilgamesh is aware he's completely overpowered and can trivially defeat anyone, and has an ego about it. In his mind, if he has to put effort into fighting anyone, ie wearing his armor or putting thought into his bladespam, he's declaring them a challenge or even an equal to him.
Unfortunately for Gil, many nasu works involve characters who, through some loophole, concoct an unprecedented overpowered bullshit ability, and Gil fails to realize until the last second.

He refuses to use the armor against people he deems unworthy of respect. If he thinks someone is at least worthy of some basic respect, then he'll don the armor in battle.

He has all those weapons but isn't practiced with most of them to the same degree most servants are skilled with their weapon of choice. Not to say he has zero skill but in terms of skill he's a jack of all trades when most servants are masters of theirs.

Clairvoyance takes some level of concentration so if in combat you can't quite literally just see every attack coming. It can be used that way but it's not absolute.

He only brings out Ea when desperate or for fun. Similar to the armor, his arrogance means he's not going to just throw it around.

The event is set in 2001, about 12 years after the Mahoyo VN, so there's a few things, like you get to see an older Sizuki and Tobimaru. Aoko isn't older because the version of her there is basically a projection of sorts of her actual self.

There's more but it's not happened in the NA event yet as story progress is time locked.

To be fair, they also excuse having Sizuki younger fairly quickly too. You meet the 12 years older version of him on the way up the mountain, and he helps you find where you're going, then you go separate ways. Later when Aoko and Alice join you, Alice says she wants to see you summon. You try to summon and you summon... younger Sizuki (which is also the version that stays with you and you use in gameplay).
