CVX had a bunch of small changes done to items, like some files being moved to more obvious spots. There's also stuff like the addition of more Wesker cutscenes, the existing Wesker cutscenes being changed (there's more than just the Alexia fight the other anon mentioned, although some of it is just dialogue so Wesker gives off a more "imposing" vibe), and Steve having a different haircut because there was some sorta controversy about him looking too much like Leonardo DiCaprio or something.
If you want to play the original CV as a curiosity then all the power to you, I'm not actually sure about the effects like the fog being removed from CVX.
It's worth mentioning that CVX did have a Dreamcast release which was JP only, although an English patch exists. This might preserve whatever effects you're talking about, since it's possibly just a console port issue rather than a CVX issue.

Yeah, the original PC ports are absolutely dogshit for FMV quality, probably due to codecs in the 90s being kind of a shit thing to have to deal with for the time on Windows hardware but I wouldn't really know for sure. Consoles didn't have to worry about that. It's why most people say you really need CR because you get the best quality FMVs without modded enhancers on top.
