Does the farming go beyond plant/water/harvest? Is there stuff I need to watch out for like soil fertility, temperature, humidity, stuff like that? I just don't want a Stardew Valley clone

Probably Vintage Story. It's a voxel-based survival based game that aims for realism. In the game when you farm you need to keep track of

>Crop Rotation

But even with how deep the farming goes here, it still isn't a real picture of real life farming. For that you need to go outside and learn from others.

Sakuna of Rice and ruin probably has the most in-depth farming
Sadly the rest of the game is so-so and farming is basically a big minigame.
