One thing Garland absolutely has a handle on is a dense atmosphere. He's a mixed bag writing wise but all his directed films so far, and his show DEVS have great aesthetics, sound design, and musical scores (albeit usually synth based, Elden Ring presumably wouldn't be), so I expect it to nail the dark fantasy look and feel. If it's just a straightforward, contained story set in the world and doesn't try to adapt the whole game it could be an enjoyable time.
Idk why that game is so popular. 60% of the time you are literally just walking or beating up weak enemies. It's so boring.

There's a million ways they could end up doing that so there's really not much point in speculating other than for the fun of it. Maybe they'll actually give the tarnished a personality, or it wont even be about the tarnished at all. It could have some existing character as the protagonist and focus on their story, or they could make up someone entirely new. But the fact that the game itself doesn't have a traditional story is the least of their problems. The most difficult thing is just going to be to properly capture the overall tone and atmosphere of the game while still delivering something either coherent or interesting enough to make it worthwhile.
