For someone looking to get into "real" monster hunter, and not just the modern stuff for casuals, what game should I start with?

P3rd for the most polished least bloated version of the "classic" experience, will give you a taste of the formula without inundating you with systems and gimmicks, on the easier side but that's fine for a new player
Then if you want to experience the true "classic" experience you can go backwards and play FU, more content, less polish, """sovl""""
From there you could go in any direction depending on your tastes:
3U if you want to fuck around in water and see the monsters related to that
4U if you want to see the beginning of the 5th gen DNA with mounting, gimmicky weapons and a lot of new monsters that are now mainstays
GU if you want to just say fuck it and experience the anniversary title that's the culmination of every game prior with customizable hunting styles that modify every weapon

the suffering is enjoyable and every other monster hunter will feel comfortably lenient in comparison
that, or portable 3rd. it's a bit easy but also right between the old titles and more modern monster hunter so it is a good entry point to the series. the old games don't feel too crude and the newer ones don't feel too new when compared to p3rd. it is a shorter title and a good way to get to know the series and move to any other title

For games that are readily available, you can try 4U. Generations Ultimate is an "all stars" type of game that featured (almost) every monster present in the series up to that point + new but has a lot more mechanics.

Also I guess the question is HAVE you played MH before?

Do GU first because its the most beginner friendly old school MH, then if you enjoy it play 4U and FU
Do not start with anything pre fourth gen because you will get filtered hard

Assuming you really are ready for a tough series, Freedom Unite/Portable 2nd G has everything in one from the first five games, if you want the earliest "definitive" title. It's a good start unless you really want to suffer, then just start with 1 on PS2 and become a real John Hunter.

If you just want old-gen MH that is also not CBT, just pick Generations Ultimate, it's got almost everyone in it already.

Remember to look up what fan server to use for whichever game you pick, these games are best enjoyed with others once you get out of the early game!

I kind of agree with P3rd, but I do think Freedom Unite is a better starting point. Don't have to clear the whole game, but it'll give you all the fundamentals and exposure to the classic monsters. Then you can move into P3rd, and from there GU. Generations Ultimate can also be played on the 3DS, not just the Switch, but you need to get the Japanese version(MHXX) and use the English patch on it.

I think it's beneficial to learn good habits with the weapons when from they were a lot weaker and didn't have all the extra benefits or stances. Spartan training and all that.

Every game changes things drastically. Each entry adds mechanics, removes mechanics, adds monsters, removes monsters, adds weapons, REMOVES WEAPONS. You will never get people to agree on which games are "real" Monster Hunter or even which games are good, because they've all done something to personally slight each autist who enjoys the series
