It has denuvo so this is probably one of the worst places to discuss the game. They've also haven't bothered announcing the actual patch so lots of people wouldn't know the game is great with hardcore mode now.

You learn dedicated combo strings that can do things like knock an enemy in the air, you can cancel strings into other attacks to hit the same guy easily, and it's obviously useful stunlocking an enemy to death. It doesn't literally go 20 HIT COMBO A THOUSAND POINTS but the scoring system involves opening an enemy up for a finishing move and landing it, so you'll naturally gravitate towards certain combos so you can do that.

Probably because the game is about efficiency, you have multiple ways to finish mobs and "combos" are really only useful to maximize the damage on a window you get from bosses or armored mobs.

I can't really blame you fully for a shallow take on the game, normal mode is basically a glorified tutorial mode.

There's a literal launcher like Dante's High Time, but combos generally knock enemies off their feet up into the air so you can do an air combo on them.

Because it's a meaningless score metric that can be inflated and doesn't weights on the final score, the only thing the combo matters for is to trigger amulets and even then the system itself is more tied to not being hit rather than the combos themselves since it has no decay. The execution gauge isn't tied to combo otherwise kunais wouldn't be the main way to raise it and as a score metric it only copunts the max amount of how many executed enemies at one time was, the other scoring metrics are all tied to efficiency and combo itself is tied to not being hit..
