Partly it's because knowledge about magic being real would throw the muggle world into anarchy. And partly it's because normies and religious organizations such as the catholic church really don't like magi so going incognito is the best way to prevent a witch hunt.

IIRC with the grail wars it was because the magi involved wanted an impartial arbiter who had no horse in the race so to speak. They also often team up against rogue magi who break the masquerade because it is in both of their interests to take those out as soon as possible.
