I'm probably the only tard who doesn't like these type of games or ends up getting disinterested.
I find the side quests, side content to be a chore and feels it's a way to just waste time if it leads to nothing.

You don't like bad open worlds, which is what most open world games are. A good open world has great world building, NPCs that don't repeat themselves, has the player interact with the world, and most importantly makes you feel immersed. IMO a game like Kingdom Come: Deliverance 1 (I never played KCD2) has a superb open world.
