Just swapping Goku out for Goten wouldn't change anything besides Zamasu being arbitrarily stronger, we saw this in Sparking Zero with Gohan Black, at most it gave us evil Gohan and a slightly different Fused Zamasu.Goten Black, as a concept, has more problems with the Goten aspect than it does the "the hero of the present becomes a villain in the future" aspect, Goten is too pure and kindhearted to ever harbor that kind of hate.
