I've realised the "trick" is to keep killing things with your maximal amount of health before levelling up, the excess xp is stored.

The dragon always has a free egg in a surrounding square too.

Heals are better the higher your max HP, so you want to avoid using them as long as possible.
And if you didn't realise, you can go to 0HP and survive. The game tries to tell you this but it's easy to miss.
