I don't hate the Vietnamese. Their women somehow manage to be very shortstack while holding enough East Asian facial features. Some of my favorite models and "massage ladies" are Vietnamese. And apparently they're the cheap manufacturing center of the world right now, while also being very smart people. And naturally, their food is great. Like Thai, but more herbal. Also they beat the Americans, which is based.

Their language is kinda hard to listen to though, and I say this as a maniac who actually likes Mandarin and other Chinese dialects.

It's a beef consomme but a lot cleaner because Sinosphere cooking has a heavy emphasis on "cooking out the raw/gamey flavours". The toppings are pretty good too, especially if you're willing to pay a little extra. Very hearty, warming fare without being as heavy as the bone broth ramens.

The noodles themselves aren't the highlight though. Saying this as a SEAnigger of South Chinese descent, South Chinese noodles (from Canton-Teochew-Hokkien) kinda suck. North China is where all the good noods are at because they actually take the fucking time to develop the gluten. Whether it's yellow noodles or the rice noodles used in pho, they're a textural letdown.

No, my recommendation is for restaurants that do La Mian ("pulled noodles"- the origin of the word ramen) and if you can find it, Biang Biang mian. The good news is that at the very least Din Tai Fung (which is everywhere these days) does La Mian and in fact should usually have chefs hand-pulling the noodles onsite. Biang Biang mian originates from Shaanxi so restaurants specializing in Xi'an fare should pack em.

Making the noodles are a pain in the ass, making the broths are a pain in the ass, making the toppings are a pain in the ass. That, and Asian hyperautism means the eateries have specced so hard into making noodles that your homemade efforts will definitely pale in comparison to the industry standard. In terms of East Asian noodles, bear in mind that there are Fried noodles, Soup noodles and then also what I call "Dry Tossed" noodles (tossed in sauce, much like pastas), so keep that in mind as you progress through the space.

I wouldn't make the noodles, probably, making all that pasta sounds too annoying to bother. Broth isn't that bad and you get a bunch from just cooking one batch. Obviously it will be worse than professionals, but that's just what you expect when cooking. I've just always liked soups and east asian ones tend to have flavours I like.

Right, but whole noodle soup branches are defined by their toppings. What's a good ramen without chashu? Can Bak Chor Mee (minced pork noodles) still be BCM without the Bak Chor (minced pork)? And a lot of the toppings are a lot of work- to the point where some of them are straight up main course dishes of their own. In regard to noodle soup dishes, you gotta pick your battles, which I suppose you clearly seem to be ready to do.

Also regarding definitions- sorry, forgot you were referring specifically to noodle soups. Fried noodles and dry tossed are separate categories altogether.

Actually where I'm from, Singapore, we have a few spins on this idea. The most famous of which is our fried prawn noodles, where we fry some noodles, then take a prawn broth (usually used in prawn noodles soup) and braise the fried noodles in that soup until the soup thickens and becomes a gravy. Real good stuff, pain in the ass to make (I tried).

Nothing tops rosemary, though. I take a bunch of dried rosemary, add in a few other basic spices (salt, butcher pepper, paprika, chili powder), then blend it all up in a pestle and mortar. I'll use the fresh stuff whenever I cook lamb. Improves every dish that it's in.

Miso paste is good to have, I add it to soups, stir fries (and not even necessarily to Asian dishes only). Fish sauce is a nice addition to broths and stir fries too, despite the foul smell at first it's a beautiful depth. Top the final dish with spring onion and fresh coriander, unless you're one of those genetic mutants that taste soap in coriander/cilantro.
The earlier you add chilli in, the spicier it will be. I fry mine together with the first thing that goes in, but if you can't take the heat, add it towards the end.
If you ever roast a whole chicken, keep the bones for home made stock.
