Is it cheating if I switch the game difficulty to Easy because I’m having a hard time fighting a boss?

It's only cheating if you turn the difficulty back to normal afterwards. If you leave it on easy that just means you admitted defeat.

If you savescum for multiple endings it's cheating.If you fight a boss 50 times and at that point an expensive, limited item/consumable is fully spent and you savescum just to replenish those resources then no, that's not cheating because the alternative is just mindlessly grinding mobs again for a while and then just stocking up the same item again at a merchant, instead of just immediately attempting the boss again. Obviously this doesn't apply/work the same in every game.
