I believe that more often than not, this was due to technical reasons and not intentional (objects being sprites, not part of the background and later on, objects being 3D instead of pre-rendered) but it had the useful consequence of making stuff obvious.

Testers and QA are different even though they both do "testing."
Testers are there during early-to-mid development to decide what sections of the game need to be iterated on. Like if a puzzle is unintuitive to solve.
QA is usually done very late in development and most of the extent of what the QA can report and fix are text mistakes and crashes. The QA can report shitty game balance bullshit but the devs are very unlikely to make big adjustments to the game at that point.

I've used substance painter myself, they just need to create the non yellow paint texture then bake it. Then go back and make a copy and then add yellow paint, then bake it. There now you have two textures. Here I'll show you, it's literally just layers than can be turned on and off.

Yellow paint is the product of diversity hires as testers toblow iQ to play a single game, but they just want the tester money.
