The pre-SotN Castlevanias are the challenging ones, although they play very differently from SotN. Try out Rondo of Blood if you want, since it's set right before SotN and you play as Richter

Then buy the Dominus Collection on Steam which is absolutely amazing and the best versions of these games.

You can't go wrong.Also, I didn't like Order of Ecclesia very much but I acknowledge it does its own thing and it tries to be more difficult than the others. The only issue is that OoE's level design is pure trash - if you thought the inverted castle was bad then you haven't seen nothing yet.
