The consistent problem with Dark Souls' rpg mechanics is that the devs never figured out how to balance around higher stat levels.
Even in Dark Souls 2. Once you have high enough VIG+STR/DEX stats you can basically just face tank the whole game right up to the final boss.

The interface does show it to you, it's not hard to track how much each level increases your stats, but more importantly, it's far easier to know when your stats stop making a significant difference in your ability over actual skill. If you're stressing about soft caps, you're only telling on yourself that you have a skill issue.

Stats matter less the further into the game you go. You're not expected or required to be anywhere near the stat cap for any of the hardest content. This goes for pretty much every RPG worth a damn. Raw numbers are more important early on and in the late game it's your abilities and strategies that make the bigger difference

Part of the point is how various characters in the setting eventually tried to get blood out of a stone, so to speak, and sabotaged themselves. Don't repeat their mistakes, but if you don't learn you face the penalty. It also encourages paying attention to the stats in question and weighing what's best, along with being more versatile with the stats you do increase.

I think the softcap mentality of DS games is actually brilliant, but isn't utilized the way it should be.
I think a weapon that has an A/C ratio between Strength and Dexterity should mean that the optimal stat alocation for that weapon should be, let's say 4:1 between strength and agility, and between the lettered modifier and a linear falling off of stat benefits you could actually have builds that can specialize in different stat ratios rather than a single stat, creating more build diversity.
Depreciating stats also rewards multiclassing, in theory, because INT and FTH open entirely new toolkits of utility and buffs. Which is fun.

Regrettably DS games don't actually have linear falling off of stats, it's stepped, which ruins the whole thing.

1 to 99 should be a solid equation, not a variable one. That's my real problem with the system. It's obnoxiously tedious and needlessly punishes someone who just wants their stats to go up instead of having to make an aspergers-inspired mathematical equation of a build. It's the most autistic sadism I have ever seen and doesn't even really do it's job all that well. Most people can figure out pretty quickly when a stat gives you almost no bonuses on the next level.

You can play it as long as you want. It goes up to NG+99 I think. There's not supposed about it. It's just stupid that after 60 it stops giving you meaningful rewards but still lets you level it up. I'd have thought that was pretty hard for anyone to argue against. The higher a stat, the more rewards you should get. If 60 is the max make 60 the max.

I've got into a similar argument over the lack of pause function in these games. It's objectively poor design and a bad thing but people will still defend it, like I'm attacking the game or something/

The scaling is still there, it's just extremely small.
The actual problem is why is that STR is the only stat that has tangible benefits from going over the hard cap due to two handing applying a flat 50% bonus to your score.
You could also make a case for the current PvP matchmaking being dependant on your level range, which is inherently tied to your stat sheet, which is a huge mess in terms of balance, or lack thereof.
