The remaster on steam is an official localization that's supposed to be great idk
I guess there was a fan effort to retranslate it at some point but I assume they stopped after the official English version dropped. They finished it for fate and ubw but I still preferred the mirror moon version.

DO NOT play Heaven's Feel route on REMASTERED version! The amount of censorship is insane, to the point where the story becomes nonsense. Even anime movie adaptations weren't censored compared to REMASTERED. Take note that censorship is not only sexual, violence also was censored in this route. Also it's not only H-scenes, the text and narration of every single scene was censored.
tl;dr: Play the original version for HF.

Yeah I played through most of the fate route using the "new" translation and I eventually switched back to the mirror moon. I don't speak Japanese but it felt "off" to me among the numerous English errors.
I remember everyone shitting on the mirror moon translations for tsukihime and fsn back in the day but I think they're great.
