1 & 2 have great settings and gameplay.
The writer of RE2, at the time a writer for TV shows, really crafted an excellent character driven story on top of a great setting and universe.

1 was a near perfect experince on its release and the sequel is really one of the best sequals in all of creative media.

Because the OGs are timeless classics with engaging, addictive gameplay, tons of replay value, chill pacing, and a stellar audio-visual design.

After the OG trio, the franchise has been re-designed from scratch some 2-3 times, appealing to vastly different target audiences.
It has not been good for over 20 years.
