Why do so many games devolve into systemslop and numberslop?

How come no one figured out how to make a game where the intended experience is the optimal experience and you never have to think about the meta systems and numbers governing the game, where you can just act the way a character in that world would actually act and things would work out

MMOs are an extreme example, this applies to single players games as well

WoW just took the next step and simply embraced the excel gameplay

That question has been bugging me lately.
Has me questioning the whole medium.

So many games are dragged down by systems, less would somehow be better.
I feel like the only way to enjoy games is in spite of these systems, having to limit yourself or completely ignore certain things

MMOs often get away with having too many numbers because there might be 40 people fighting a boss. I like games where most of the necessary information just comes from shit that the characters can see. Ninja Gaiden, for example, doesn't have many UI elements and most of the information it does convey is just through shit in-universe.

Optimizing numbers is fun thobeit. I actually think WoW strikes a pretty good balance where you don't really need to think about the numbers while leveling and can just vibe and play into class fantasy (which action bar combat can actually do really well by giving you a much wider range of skills than a typical action game, while still giving you more agency of movement than a turn-based RPG), but then numbers optimization becomes important in the endgame. It gives something for both casual and meta players, and keeps endgame from getting stale.

These days people optimize the leveling experience anyway, but you really don't have to. And you can turn most of those numbers and other UI elements off, a lot of them aren't even really necessary at high-end play.
