As much as I enjoy SM64, I like the direction Bowser's Fury made bridging the 2D and 3D games together into something with the mechanics of the former and the open world of the latter. Something like that with a more expansive world would be IMO the ideal direction to take Mario next.

The next Super Mario game should return to a Super Mario 64 type game, with a heavily expanded castle, Bowser's castle, and the surrounding area with zones that all loop and connect to each other, like Dark Souls type level design.

With bosses and mini bosses all over the place, in rooms, guarding doors that lead to paintings, jumping from within paintings to other paintings if there's secret shortcuts.

Vast array of physicality and movements you can perform, combos and different aerials and attacks and inputs.

Mario has a plunger, he does jumps and backflips, he can throw this plunger to stick it on objects and bounce off of. He can swing this plunger at enemies to defeat them, he can flip behind enemies to hit them in their weakpoint, there's collectibles, like 120 of them, and defeating enemies powers up Mario and the plunger, at maximum power Mario can grow 2 stories tall and become invincible for 20 seconds

Mario has a ring of special maintenance keys that all are cute little characters you unlock and attach to a keyring, they give you access to the castle's rooms and layers. They grant you special skills that you can spec into and build up, like a mini skill tree with effects you want, one key would let you do an air dash, while another will give you a fireball throw etc.

No hats, instead keys. Bowser is an ally, team up against new villainous threat.

Coming off of Galaxy, the level of dread I felt when this frame appeared during the E3 presentation was unspeakable. You were immediately able to tell this was not going to be a game about an epic adventure, but a super casualified 3D Mario. Among my top 5 biggest gaming disappointments.
