Every location and enemy from Rebirth will be accessible in part III, the only thing I'd be missing out on would be the story which most people think is really bad anyway.

If it's anything like the change from Remake to Rebirth, you won't really be playing the same game, so it's worth experiencing it for the battle system alone.Rebirth isn't just a part 2 content pack for the same game Remake was, it's a proper sequel in terms of gameplay. It feels like the jump from KH 1 to KH 2.

Tried replaying remake and holy moly the level design is so bad, so claustrophobic! Tight hallways everywhere even in outdoor areas and ugly to boot. Anyways looking at rebirth and things seem to open up a bit and I don't just mean the open world.
