Game elements can be abstracted to a non-disbelievable extent without sacrificing immersion, but if a diegetic attempt at abstraction causes people to question the element then the immersion is lost and player enjoyment goes down. The effect becomes noticibly uncanny.

Yellow paint sucks, but not because it guides you with a visual cue. Visual cues for progression are not an inherently bad thing, and is a sign of good level design when properly integrated. The problem is that yellow paint comes across as a lazy bandaid for visually messy level design and art direction, and ends up looking out of place and immersion breaking as a result.

Here's my hot take, I want to know what is and isn't interactable. Older games visuals were more streamlined there was less noise and clutter from environmental detail. Knowing what is interactable was pretty obvious. Yellow is used because it is a high contrast color. We can use contrast as visual language. To say your eyes right here dummy. It needs to look like natural part of the scene. It has look believable in the world. Yellow paint is looks especially jarring, it breaks the 4th wall says you are in video game. If different materials have different properties than using color to indicate the type of effect is objectively good design.
