Juyo is an aggressive and often chaotic style, while Niman, if I'm remembering rightly, makes heavy usage of sweeping strikes and is effective for fighting multiple people at once. Now, if Mace and Dooku were duelling prior to Dooku falling, it'd be a battle of style (and ability) versus style, since Mace wouldn't be getting his anti-DS buff. That's honestly a battle I see Dooku winning pretty easily, as it's a well-known fact that he's one of the greatest duellists and he has a saber that is customized to fit his exact style. I may be a little biased towards Dooku since the actor who played him is not only a favorite of mine, he was also my mother's favorite and the reason my first name is what it is, but I'll happily stand by my opinion of Dooku's abilities.
