Snow levels always suck. The environments are all white and samey and they tend to be open areas with no effort put into the level design.

Snow levels are nice as long as it's not an old game with slippery ice mechanics, I hate that. Trains and boats are usually great.

Mountains that actually utilize verticality in level design.

Also, swamps and deserts are probably the hardest environments to get right, they often suck. But when done well, I really love them.
