How many years must I play shmups for to be able to play the actual best games in the genre (Dodonpachi, Ikaruga, Mushihimesama, etc.) the real way, as in not just credit feed my way through them?

Bait thread, but the answer is 0.
Just pick up the game you want to play, and play it trying to work toward the 1cc

Play the novice modes, they're fun too.

But don't you pick up more experience playing easier shmups first?

you pick up more by playing what (you) want to play, if you want to play ddp/ikaruga/mushi then play those
These games all have easier modes anyway (1-all for ddp, easy mode on ikaruga, original on mushi) so if your interest is there just play. It's also fine to start with a lower requirement (such as 3cc or 2cc) and slowly climb your way up
