Because ports are done by teams who don't care or aren't allowed to care about perfectly preserving the experience of the original game. They're mostly made as cash grabs. The goal is to get the game running without crashing or game-breaking bugs as quickly and cheaply as possible.

HD project with re tweaks has hotkeys for weapon swapping so it is automatically the best version.

One of the color filter options seems like it was meant to be similar to the original visuals, but it was still really muted and dull looking.
