Saya no Uta is probably the best 'first visual novel'. It's only a few hours long, only has two choices, and it's good.
After that, I'd rec Fate/Stay Night, 999, and Stein's;Gate. You can develop your taste from there.
There' also romance-focused, 'dating-sim'-esque ones, but I don't like them so I won't try to recommend anything there.

This is a question on the level of "I'm new to novels/ movies/ music, what should I check out first?" It's an entire medium, not a genre.
Where you should start is the same as with any other medium: you've seen something that piqued YOUR interest, so you follow through and give it a chance.
So if you think Higurashi looks neat, check it out. And if you like it, THEN you can ask for recs similar to Higurashi. Or if you don't like it, you try the next VN that looks appealing.
Save the alleged must-reads of the medium for if and when you actually want to read them.

E17 has an awful middle, it just goes on and on with the rollercoaster and sandwich I don't even remember the VN since it was so fucking repetitive everything just mumbled together. R11 doesn't have a proper ending but what ending should there be? They escape, all is done. You can deduce every mystery from the TIPS section or the fan made blogpost. People overreact way too hard to this, yes it's literally unfinished but that doesn't mean the journey isn't one of the best in mystery VNs

Umineko is clearly a more female focused story, but I think it has a pretty balanced cast between ages and sexes, and male characters are well written too.
Higurashi is more like your typical anime, with most of the cast being teenagers and waifus, but really my only problem is Kei, he's the only character I dislike, which is why I hope he gets better.
