This is partially a cute thing to show that Dojima has become OK with being reminded of his wife Chisato. But it's also because Dojima and Chisato is another allegory in the game for Izanagi and Izanami, and they realized that the simple piano theme "Corridor" from the final dungeon "Yomotsu Hirasaka" could be implied to be Chisato's music by tying it back to Nanako in the epilogue. "Corridor" is in the original P4, and if they'd always had this idea there would probably be a piano in the Dojima household, so I think it was a big brain retrofit.
