By default LTSC doesn't have any of the AI bullshit in it, doesn't nag you about TPM, does not have any feature updates (only security ones) and it fully works with a local account. You can run Chris Titus' debloater if you feel like it but LTSC is pretty barren as is. The only quirk you might run into is that LTSC doesn't have microsoft store pre-installed so you'll have to paste one line into cmd if you need it for whatever reason. If you want to undo the shitty changes made by 11 (like obstructing the proper right click menu dropdowns) then look into Windhawk. Personally I also recommend installing Open Shell for both 10 and 11 to avoid the shitty start menu they ship with.
