A lot of monsters have very unoriginal designs and movesets while lacking the narrative hooks necessary to make them satisfying narrative set pieces. It's easier for human boss fights to be written well. Their movesets and designs don't matter as much due to people thinking of them as more grounded than their monster counterparts.
I will take a well designed monster fight over a human fight any day of the week though. No question about it.

Because combat tends to be designed for enemies with a size similar to the player's, making giant boss fights like the one on top unfun gimmicks.
Monster Hunter focuses on just the giant bosses, and is incredibly successful for that.
SotC is another game where the only enemies are gargantuan giants, and it works because the entire combat is designed around them.

The actual kino ones exist as a contrast to the other bosses in their game, which are usually going to be bigger or at least flashier and kind of have more going on. This kind of hypes them up a bit in your subconscious because if every other boss was this massive demon or this crazy enhanced cyborg, and the next opponent is just a guy...how strong is that guy? He also tends to fight similarly to the player character, which makes it at least feel more like a "pure" test of skill. There's also usually an element of it being personal within the lore, I've noticed.

It's hard to make a boss epic if you can only see 10% of its entire body at any given time. Maybe it'd be better if devs would adjust the camera to make them more visible. It would also help in tracking movements.
They also tend to be incredibly slow. It's like playing a rhythm game on super easy where the game has little to do with rhythm games and more with a series of QTEs. If you can hit the boss between the attacks, they become pushovers. But offtentimes you're just waiting around too.
