It adds a psychological complexity to the fight on top of its mechanical difficulty. If you're not strong-willed like myself eventually even the first phase will make you struggle. By the time you've mastered the first phase it would stop feeling like a fluke that you managed to get as far as you did and when you manage to finally beat the second phase the pleasure of release is just that much greater

I think phase twos are too abundant nowadays. Only a few bosses should have a phase two, not every boss should be able to suddenly gain immense power when pushed into a corner. In real life most people die like 5 seconds into a fight anyway so they’d obviously go all out from the start. Are video games real life? No, but.

It's mostly because bosses are a ton of work for little reward. Today they are most likely used as a "wow" setpiece, so they cannot be on the level of contra anymore. You need tons of animations(attacks, movements like jumps and dashes) and an above room level ai. If you pass this challenge on your first try, it's 2months of work for 3min of gameplay. Madness.
So most devs have taken the soul pill, and made bosses unreasonably hard/long to stretch that content. Of course it's even worse when you need to re-fight it later.

Devs focus too much on bosses these days. Are they just easier to make than fun levels overall, or is it just because the audience seems to want bosses for the dopamine? Imo a challenging level is always way more fun than a challenging boss and you could get away with reusing simpler enemies if you just place them cleverly.

Aside from those boss gauntlets, classicvanias got it right. The meat of the game is on the tough levels that you have to learn and not the bosses. CV Chronicles, which is considered one of the hardest, has piss easy bosses but the they are not the main focus of the challenge, which is why I like it.

Latter. Also bosses are something you can use in marketing easely. They can be easier, if they are shit. If you wanna make a good boss battle it's pain. It's also something that a team can do better, but a solodev can be swamped into it because every system requires care and time.

It depends a lot from what's expected from a genre. In Mario you can avoid bosses or make very few of them. An hack n slash /soul needs a lot of bosses. An action 2d game without a boss at the end of a level it's lame, so for beu and many genres.
