Because they had access to new things and they wanted to play around with them to see what they could do.
Of course it resulted in some truly ugly things like the character models in the overworld in FF7 for example. But they had to start somewhere.

When people talk about the graphics in Final Fantasy games, the FMVs were the jaw dropping moments. Old Blizzard was the same way, those old Blizzard cinematics went HARD. The old WoW intro cinematic from 2004 still looks better than most new games.
