How do you make unarmed builds and combat in games fun while also explaining a logical reason anyone would pick it over using guns, swords and magic?

Why does there need to be a logical reason for it? If someone an damage someone in full plate by slashing at them with a shortsword then why can't you also damage them by punching them?

Shortswords target unarmored areas like the armpits, groin, visor, or back of the knees. But good luck trying to fist a guy in full plate to death.

If someone has super strength, not a whole lot of justification is needed. Sure, a sword will still be more deadly per hit and give better reach, but punching and kicking can be faster, trickier, and more versatile. Plus grappling is a lot easier with both hands free and that can be REALLY deadly (and cool, imagine german suplexing a guy in armor)

Crimson Desert does this really well. Your primary weapon is a sword/spear/whatever, but you also have a separate unarmed button that you can weave into your attacks too, it flows really well and looks cool.

It depends on the game, no?
You could use kung-fu magic,tai chi bullshit where you strike the armor and vibrations crush the organs inside or some bullshit.
It doesn't have to be real just "believable". Bonus points if the character actually looks built for that and isn't skinny.
Also just look at characters in myths and legends. Hercules, Samson. Occasionally they used blunt weapons or whatever they found around, (and Herc shot the bow sometimes) but most of the time they just used their hands. Weapons were specifically invented to compensate for lack of strength. If you can crush boulders with your hands there's not much difference between your arm and a hammer, other than some extra reach.

In Daggerfall, monsters will be resistant to weaponry under a certain quantity of material. Liches for example need to be taken out by mithril or higher gear, else they take no damage.

Hand-to-hand negates all this, and you can punch whatever creature you want from the very start. Honestly it’s broken af.
