How come there's no such thing as a god-tier video game UI? Even the very best video game UIs out there are just pretty good.

Because nothing is really designed anymore exclusively for a single platform. At the very least, it has to look good on smaller mobile screens. Otherwise they're just poorly aping good UIs that worked.
