No. You will never see a big-name studio produce an MMO ever again.
It's an outdated model that only really appeals to an aging userbase (I'd suspect the average age of FFXIV and WoW players is nowhere south of 30, and that number is only gonna keep going up).
They've mostly been succeeded by Live Service Games and Gatcha in different respects. With the solo/"parallel play" grinders being drawn to the latter, and the people who want to play with others being drawn to the former (when you combine a live service game with some system-agnostic chat platform like Discord, they start to take on a kind of MMO-ish quality themselves).

or ever because MMOs are expensive and risky and they would rather milk XIV dry for as long as possible

Final Fantasy XVII will undoubtably be a Final Fantasy VII Remake Trilogy clone, but only one game. They spent millions perfecting that combat system and it is very beloved, so there is zero chance that they would just trash it.

The FFXI staff have openly talked about how they've been successfully recompiling the source code to enable themselves to be able to remake the game if given the call to do so, so a modern FFXI-like is honestly more likely than you might think.

Not likely; FFXI and FFXIV are still active enough that making a new game would likely not be worth the financial risk (while there is some benefits to being your own competition, Square isn't really big enough to run that many MMOs at once). While I think there will be a multiplayer focused FF game in the future, I don't think it will resemble a traditional MMO, and it likely isn't the next one.

Unless Square go full pants on head mode and make it something like an extraction shooter for god knows what reason

I don't think any such ambition would be like that, at worst/best depending on the person, I could see them using the opportunity to modernize how you interface with the game while keeping the core of it the same. The biggest barriers of entry to FFXI is the sub fee, installation process, and how menu based every aspect of the game is (and how antiquated interfacing with those menus are)

There's no inherent need to move away from the core of it's old-school design sensibilities because for gamers that want an FF MMO that's more modern in it's overall design you have FFXIV. However, there is also literally more players subbed to FFXI right now than there was 10 years ago, and with the initial success of classic WoW, the successful launch of the GW1 remaster, and the consistent success of OSRS there is a clear market demand right now for those "boomer game" MMO design sensibilities right now. I could see a hypothetical FFXI remaster/remake being SE's attempt to get deeper into that market, rather than trying to turn it into a product that already exists, but to be fair SE has found ways to snatch defeat from the jaws of easy victory innumerable amounts of time in the past.

Cannot stress this enough. There will NEVER be a classic style MMO made ever again.
The expectations on what it would need to launch with would be way high, impossible to satisfy demands on launch. And the team would need to be established and ready to constantly do large updates/patches to keep attention.
Look at how WoW/FF14 started in their early days, even the reboot of FF14 (2.0) had very little "content", and pumped out as much as it could in the span of two years.
For proof that it would fail. Look at New World or Ashes of Creation. Case in point right there.

You now remember when everyone was certain Ishikawa would be 17s writer, which was funny because Maehiro was immediately placed on the 16 team, along with a large chunk of CBU3 when HW wrapped up. Ishikawa remained on 14 as msq advisor with Oda and still writes sidequests here and there.

And now that 16 bombed, there will not be an opportunity for CBU3 to handle mainline for a while.

Buddy, Squeenix are still making money off of a fucking 25-year old ps2 mmo. Of COURSE ffxiv is going to get 5 or 6 more expansions. The mmos are the only things currently making squeenix any money.
