If critic reviews can't be trusted because of paid reviews, and user reviews can't be trusted because of review bombing and downloading youtuber opinions, is the only way to tell if a game is good is by playing it and hoping you dont waste your money?

It's to watch footage or gameplay of a game WITHOUT a review attached. Watch someone just playing it, and you will get a moderate idea of the game's quality. You can choose to factor in the skill of the player but outside of extremes (game journos) that's not really a significant factor.
