The idea of summoning heroes of the past as servants gives you almost endless variety of interesting and cool scenarios you can do. Between changing venues for the grail war to different places and times, and changing the lineup of servants and masters, and throwing a few extra curveballs for good measure, you can repeat this formula dozens of times. But I think a lot of credit needs to go to Nasu, the creator of F/SN, for sheer autistic dedication to his work and endlessly building on what he made.
