How would you even implement such a fight in a believable way? The only way you could defeat The GOD is if he lets you win. He could destroy you with a thought if he wanted to. More than that: unmake you. Delete you from the very fabric of space-time, and all the marks you've left on the world. Make it so you practically never existed. If God is everything, then it cannot control it's own impulses - to do so would be to chsnge the fundamental laws of reality, which it already is. It'd be like asking why thr speed of light isn't a bit faster or slower. If organic life is a natural evolution of the inherent laws, then the protagonist is already a part of God that wants the thinking part to die. That's the best I can come up with.

Wouldn't that make God simply a mindless entity indistinguishable from everything else? If God = Universe, then there is no reason to even call him God, since he has no control over anything. Would be like calling a tsunami by the name of Poseidon. The Tsunami is no god, it is just a force of nature.
In order for God to be taken seriously as God, he would have to be seperate from his creation and have full agency.

In the scifi story I'm worldbuilding, the galaxy is an incubator to raise the human race until they are eventually able to consolidate and ascend into a 4th dimensional being/god. The "gods" that the main characters encounter are previous sets of humanity that eventually ascended and left the galaxy behind to watch over the current incubated humans and continue the cycle.
Its left the galaxy full of unexplainable treasures and technology of past unique humanities, yet completely desolate. leaving the characters to wonder what happened, and set them on the path to learn the truth of their existence.

Is that too tropey, or do I have enough originality going to set my lore apart?

well there are a few possible interpretations of how a creator might relate to its creation. mind you, I'm not specifically talking about the christian god, or even to an all-powerful god in general, just to any entity that creates the universe, even as a group effort:

Like some believe that humans are made both of a body and a soul, God is the universe itself, but it's also something else that isn't part of the universe, just how the soul isn't part of the body

God is an embodiment or representation of the universe itself, but is aware and can act and take decisions; mortals that are "part" of the universe (and thus of God) could have their own ideas and not conform to these decisions, just like a human's consciousness doesn't necessarily exists in every cell of their body
