I really like Fallingstar beasts, but horseback combat i just too unsafe for the player if you are not going for hit and run tactics (aka lame) as there is no decent defensive options.

Greatswords have the most versatile weapon ash options + fast, low requirements and weight
Greathammers poise break as well as colossals, usually weigh less and are sometimes faster
Colossals are slowest but big damage per hit

Normally when a boss makes me fail and seethe for hours I have some fundamental misunderstanding on how to approach it. I got completely filtered by Scadutree Avatar until I realized you absolute cannot stay near its foot and you have to stay in front of it and target its face.

I don't need to, on Torrent I can just mindlessly spam r1 on their leg. If they raise a leg, move to the other leg. If the tail raises, run backwards to avoid the bite and then go back in. That's literally the only two moves you'll see when attacking on horseback.

Nah, it really, really isn't. If you think that an occasional charged R2 with ~1.5x damage multiplier on the head can out-DPS continuous R1 spam that doesn't need to stop to avoid attacks then I don't think you've really played the game.
Fire giant is also trivialized by Torrent, FSBs and Tree Sentinels are the only proper bosses where Torrent is an option but on foot is easier.

Now with my new run seems like basic uchigatana is STILL better than many other more stat devoted weapons.

Yeah i did the math, lazy version because i didnt include damage reduction, but basically going from 15 vigor to 30 almost doubles your hitpoints. where as going from 15 strength to 30 only means you do about 15% more damage (at lower levels anyways) 15% more damage sort of means you kill bosses 15% faster but not really, its kinda like you kill a boss in 30 hits with 15 strength, but it takes 26 to 27 instead when upping strength.
So early game you either double your hitpoints, or kill a boss in 3-4 less hits.
As a regular player with melee you want to put points into damage stats in order to meet weapon requirements, then get up to like 40-50 vigor then put in points for damage or stamina. Unless you are

its not really, when you get a bunch of damage bonuses then flat damage is better, late game split damage is probably the best. Bleed is just easier to make work.

You generally pump either Strength, Dexterity, Intelligence, Faith, or Arcane up to 50, depending on the playstyle you want.

Raise Strength if you want to wield big bonk weapons.
Raise Dexterity if you want to wield nimble weapons like katanas and thrusting swords.
Raise Intelligence if you want to cast magic, frost, or gravity spells.
Raise Faith if you want to cast fire, lightning, or holy spells.
And raise Arcane if you want to specialize in Bleed.

Raising more than one of these stats is a "Quality" build. After that you want to level the weapon you're wielding as high as you can, the blacksmith in the Roundtable Hold will do it, but you need Smithing Stones. If the weapon's Skill can be changed with an Ash of War you need regular Smithing Stones, if it can't then you need Somber Smithing Stones.

For weapons whose Skill can be changed, you can also apply an affinity to it with the right Whetstone Knife, which changes the stats the weapon's damage scales with.
Standard affinity reverts it back to the base scaling.
Heavy adjusts the scaling toward Str.
Keen adjusts it towards Dex.
Quality balances both Str and Dex.
Magic adds Int scaling and gives it inherent Magic damage.
Cold does the same, but reduces the scaling in exchange for inflicting Frost.
Fire adds Str scaling and Fire damage.
Flame Art adds Fth scaling and Fire Damage.
Lightning adds Dex scaling and lightning damage.
Sacred adds Fth scaling and Holy damage.
Poison adds Poison infliction.
Blood adds Blood Loss infliction.
And Occult adds Arcane scaling. Arcane affects the rate which status like Frostbite, Blood Loss, and Poison build up.
