It's worth it precisely because Skyrim tried harder than it needed to for the type of game it is. Skyrim is an evolution on Daggerfall, like all other TES. It's based entirely on joining guilds, doing what you're told by your guild master, crawling dungeons to accomplish it, and being rewarded with gold or loot. It's not Mass Effect, it's not Witcher, it's not obsessed with quest choice and consequence. Saadia/Kematu in In My Hour of Need? Destroying/Joining the Dark Brotherhood? Refusing Vaermina in Waking Nightmare? Stormcloaks/Imperials? Dawnguard/Volkihar? Effectively gifts that wouldn't have even been a thing in Morrowind or Oblivion. So you join the Dawnguard, you do what you're told by your guild master ("This is something different. I'd say do what she wants. Take her home, and see who else is in this castle"), crawl dungeons to accomplish it, and are rewarded with gold or loot.

Take it or leave it, but it's not the dungeon crawler's issue nor is it mine.

Marriage happens when you have the Amulet of Mara equipped, the NPC does the "iS tHaT aN aMuLeT oF mArA!?!?!?!?", and you pick the let's get married dialogue choice after the NPC confesses.
For the trigger to happen the NPC must be part of the marriage faction(can be romantically interested to begin with) has a needed positive relationship rank and their special prerequisite fulfilled which is usually a quest, a choice in their favor during a quest, or business partnership with the investor perk.
Any character with no romantic interest will not address the Amulet of Mara.
Lorewise the amulet signals you are ready to marry and others are to address it first which is also how the mechanic functions.
Meaning Serana, if she had no such interest would not even have had the dialogue option added.
The POINT of her dialogue about it is due to her history as a Daedra worshiper she is not comfortable with the idea of going into temples. That's it. However the fact she addresses the amulet means she is CANONICALLY interested romantically, and her casual tone implies a "we don't need to anyway".

TL;DR: Serana just doesn't want to get FORMALLY married because temple of Mara being the only faculty for it, BUT the fact she addresses the amulet and her tone is a clear statement she is romantic with you.
