Bael - My favorite. Hate him.
Mastema - Cool hearts gimmick not really used in vanilla.
Punished - Fun challenge char that relies on smart movement

With all of those game becomes mutch harder and fun. Tons of new stuff that I don't know how to handle. T.Lost completion marks seem almost impossible now.

I only use Stats+ and External Item Descriptions, maybe I'll try out Fiend Folio when I get my Dead God save file since that Friend character looks interesting but I haven't thought about mods beyond that.
