I think it's because of lighting, real life has highlights and shadows that games don't replicate well and it causes people to look totally different. Better studios and character artists can correct for it but a lot of the games she's in don't have artists that good, and also game devs tend to be really bad at doing black people in general, you see that a lot with hair too where almost nobody manages to do decent-looking black hair.
