Since knights are so expensive you could try spamming unrest/popkill rituals on their forts to tank their economy. If they're running around with a doomstack you could try remote assassination spells like mind hunt or maybe spamming baleful star/leprosy to pozz everything (although the knights wouldn't be too affected because of recuperation).

The moose is visibly barded in full black armor whereas the nation's standard armor color is green, leading me to guess they might have blacksteel barding. And since the riders are elf-adjacent beings now I wouldn't count out a default magic weapon in their hands.
