I was a jungle+mid duo with a friend and the games felt much less enjoyable than my soloq games.It makes sense to me that youre more likely to play against other duos or get worse teammates/stronger enemies, but not only did the other laners lose their matchup much more often they were also much more mentally unstable.Is the mentally unstable part mostly downstream from them being paired up against better opponents (e.g. a decent duo botlane), or does riot have more detailed info on a player than MMR that they use for matchmaking?

Each time you win you get 10 elo, so after 1 win you face opponents with 2510 elo who are now your current MMR. This is how fair matchmaking works.But with EOMM your elo is hidden, and after winning a couple games it puts you against someone with 2700 elo which is quite far ahead of your current skill. What you're saying is, because a 3500 elo smurf could easily win that match the system is not rigged for your failure. But why should the 2510 MMR player have to play better than a 2700 MMR player just to get to 2520? Its an unfair expectation and an example of how you can rig matches without smurfs being hampered and is a probable reason why Riot don't expose player MMR to the public.

The reason you should play ADC midlane is that so you don't have the support griefing your lane. If your pick struggles with waveclear, just build Statikk which has the same stats as Krakenslayer on a much cheaper cost.
