She wants to be part of his life, that's why her arc in Sonic Adventure is about getting stronger, and that motivation carries on through Sonic Heroes. She wants to be part of Sonic's life, she didn't want to be a damsel in distress that Sonic has to save, so she resolved to get stronger and more independent. Amy's love for Sonic doesn't make her love for adventure any less genuine.

Same applies to Amy. Her chasing Sonic, or helping someone, are catalysts for adventure. Chasing Sonic is her catalyst for Adventure, just as Sonic's catalyst for Adventure is stopping Eggman. If Sonic didn't exist, Amy would still love adventure, same way that if Eggman didn't exist, Sonic would still love adventure.
