I can't figure out how to use Orlea. Most high difficulty monsters can take a chunk off your health (30-50%) within 2 turns, but Orlea needs to ramp up her slimes. There's also a risk of accumulating stress in longer fights which she can do nothing about.

It's that you don't get any control over what gets lost if you go over the limit.
