They basically had to do sculptures of the Pokemon themselves, which were always going to look kind of shitty. A UTDR LEGO set has more options for environmental setpieces to adapt. They could easily do a Castle Town or Hometown set with minifigs of the characters like most of the media tie-in sets. Snowdin with Sans and Papyrus, the Ruins with Toriel, etc. would also work.

I highly recommend Garbanzo Quest to anyone who likes platformers. The level design is very clever, it's satisfying to 100% everything, and you can crank up the difficulty by fucking around in the tweaks menu to make it stupid hard if you're into that. Also you can draw pictures of your fave and it will show up in the levels.
